Tricalcium Citrate
Flavor: characteristic
The most commonly used calcium salt of citric acid is tricalcium dicitrate tetrahydrate, hereinafter referred to as tricalcium citrate. In some countries such as USA, tricalcium citrate is simply denominated calcium citrate. It is produced by complete neutralization of citric acid with a high purity calcium source such as calcium hydroxide or calcium carbonate. With its high calcium content of 21%, tricalcium citrate is the most economic calcium salt among the commonly used organic calcium salts.

Notes:
Emulsifier in foods, dietary supplement Calcium citrate is an intermediate in the isolation of citric acid from the fermentation process by which citric acid is produced industrially. The citric acid in the broth solution is neutralized by calcium hydroxide, precipitating insoluble calcium citrate. This is then filtered off from the rest of the broth and washed to give clean calcium citrate.
