(from martindale, the extra pharmacopoeia, 30th ed, p173) Antimicrobial food preservative, but limited and declining use. Acts by releasing formaldehyde in acidic conditions. Prevents "late blowing" of hard cheese by inhibiting growth of unwanted bacteria. Presently (2002) its European use is limited to one type of Italian cheese, Provolone
